TOH A2 Gir Cow Cultured Ghee is made using fresh Gir cow milk. The milk is brought to a boil and naturally cooled down to room temperature and inoculated with a natural starter culture and left overnight to make yoghurt. The yoghurt is churned during pre-dawn hours (4 am – 6 am) to separate raw white butter using the ancient process of ‘Bilona’ – clockwise-anticlockwise slow churning. This product contains no additives, is free from artificial preservatives, synthetic fillers or binders. 100% natural, farm made in daily batches.

I know A2 ghee is good; but what is A2? Is A2 Ghee beneficial for health?

A2 is a type of Beta Casein protein in Milk of the Zebu breed of Cows native to some countries. A2 Ghee is the ghee made from the milk of Indigenous breed cows – there are many breeds like Gir, Sahiwal, Rathi, Kankrej, Tharparkar, Khillari, Vechur etc. A2 ghee has high level of Omega-3 fatty acids present in this ghee is said to be beneficial for cardiovascular and other health goodness.

What does “Cultured Ghee” mean?

It is common practice to make Ghee using cream or Malia. “Culturing” is the process of inoculating either cream or milk with a natural curd starter for it to undergo fermentation to make Curd (Yoghurt) or Dahi. This Curd is then churned to separate the white butter (makkhan) which is then slowly heated and clarified to make Ghee

Why does A2 Gir cow ghee cost 5-6x the cost of some other ghee available in the stores?

At TOH, we do not use cream (or malai) to make A2 ghee. Approximately 30-32 litres of Gir cow desi milk are required to prepare one litre of A2 Gir cow Ghee. Gir cow milk has lesser fat content as compared to the hybrids and foreign breeds. Fresh A2 milk is boiled, cooled down naturally, inoculated with Curd starter and left to ferment overnight. During Predawn hours (Brahmamahurat) the Dahi is churned to separate fresh white butter (Makkhan) which is then clarified over firewood to make Ghee. The Ghee is made the traditional way – we use firewood and sun-baked cow dung cake as fuel. It is prepared in Iron Kadhais and is made by hand by farmer folk. This again adds to the cost of production.  Add to this packaging cost (without plastic), manual skilled labor, incorporation of traditional ancient techniques used in the preparation, transportation cost etc. 

How is the taste of your ghee different from any other ghee in the market?

Our ghee is obtained by churning curd and not cream (malai). So the nutritional content is more as compared to others. Therefore our ghee tastes a lot tastier and aromatic because it preserves the all-natural nourishment of ghee. Our ghee is bi-directionally bilona churned with a wooden churner. This is why our A2 gir cow ghee has a grainy texture, thicker consistency, tempting aroma, superior flavour, and is much healthier. Hence, A2 Gir Cow Ghee is costlier and better than regular ghee.
